Boyer Cream
Serves 4-6
1 cup full-fat cream cheese
5 tablespoons sour cream
2 eggs, separated
2/3 cup vanilla sugar
2/3 cup raspberries
1 cup strawberries
sifted confectioners’ sugar, to taste
1 tablespoon rose water
halved strawberries, mint leaves, and small
pink roses , to decorate
1. Beat the cream cheese in a bowl with the
sour cream and egg yolks until the cheese has
softened. Stir in half the sugar.
2. Whisk the egg whites in another bowl until
stiff, then whisk in the remaining sugar. Fold
the egg whites into the cream cheese mixture.
Chill until ready for use.
3. To make the fruit sauce, puree the
raspberries and strawberries. Sieve to remove
seeds; add confectioners’ sugar, to taste.
Swirl 4-6 glass dishes with a little rose
water and divide three-quarters of the sauce
between the dishes. Top with the cream cheese
mixture. Add the remaining sauce in spoonfuls,
swirling in into the cream cheese.
4. Place the dishes on saucers and decorate
with halved strawberries, mint leaves, and
small roses.
