Add the Yolks to a big bowl and add the condensed milk, evaporated milk and vanilla. Pour each ingredients slowly and mix gently until the mixture is smooth. Set aside.
Prepare the sugar syrup by melting sugar over low fire. Avoid burning the sugar. Just let the sugar melt.
Pour the egg mixture in the mold with the syrup. Cover the mixture with aluminum foil. Cook in the steamer for 45 minutes.
When cooked, refrigerate the flan. It’s best served cold.
